Bettercream - Help!!

I am making my 1st torte this evening and I am using Bettercream mixed with Raspberries for the filling and covering with BC. My question is do I NEED to kept it in the fridge?? I'll be serving it on Tuesday.

I would think you would get a better result by keeping it in the fridge, but as long as you don't have anything that is parrishable in your ingredients ie.......milk, heavy cream, you should be fine leaving it out.

That's just my opinion, I'm curious to see what other people have to say. usaribbon.gif

Bettercream needs to stay refridgerated as long as possible. It keeps it's consistancy and nothing will go bad in it then.

Yes, bettercream needs to be refridgerated. No matter what you add. icon_smile.gif

Not being fecicious...is Bettercream different than Buttercream? I have seen this spelling used several times in this post. icon_redface.gif

I used to work in a bakery and Bettercreme is a brand name of a whipped topping like frosting. I think it is made by Rich's. It comes in liquid form and you just pour and whip it up. It is yummy, but it does need to be refrigerated. It is not shelf stable. Also, be sure not to overwhip it. Hope that helps.

Thanks, I thought I was going crazy between the spelling and I know you don't need to refridgerate Buttercream...It all makes sense now!

Bettercream is only good for 2 or 3 days after it is opened and whipped. And yes it has to be refrigerated. Don't keep it next to the light in your fridge either. At DQ someone kept moving it there; and it looked like someone had cooked it in the middle, it was the light. And after a week, the stuff would smell rancid icon_eek.gif
