First Wedding Cake....

I'm doing my first wedding cake on June 3rd for my sister. She wants round, light blue fondant with funky designs, each tier different. Do I need 2 or 3 inch pans for a wedding cake? She wants fillings, just doesn't know what yet. I've only worked with fondant once as a practice cake. What tools are a necessity for doing a wedding cake in fondant?

Also, I'm registered to take the Wilton Class 1 in April. How basic is it? I've done cakes covered in stars, know how to make frosting, etc. I haven't made flowers yet. Should I start with course 1 and go all the way thru, or start with Class 2?

Congras on the wedding cake! That sounds like a lot of fun!

The course 1 wilton class is pretty basic. You learn how to make a buttercream rose, ice a cake, stars, shell border, gel transfer, figure piping. Thats about it. It's fun, but very basic. From looking at your cakes you probably have enough skill to go straight to course 2, but most places require you to take course 1 first anyway.

Having 2 or 3 inch pans is completely up to how tall you want the cake. Unless you're wanting the 3" pans so you can tort your cakes.

I don't know what fondant tools you have, or what design you're planning on doing, but I would suggest maybe looking through the forums here in case you don't get enough answers on this thread.

Wilton 1 is basic like stars & writing. From the look of your pics, you look pretty good!!!!

Hi! I just posted about doing my first wedding cake this past weekend. I used 3" pans and love the tall look it gave the cake. That's just my opinion, but I think taller is better when it comes to wedding cakes. Good luck on yours! I haven't really worked with fondant, only twice, so I can't give you any pointers on that.

I only have 2" pans so that is what I used on my 1st wedding cake 2 weeks ago - we did use filling between the layers so it does make them a little taller. We didn't use fondant, just buttercream because that is what the bride requested. Good luck - can't wait to see your pics! icon_biggrin.gif

I don't have any fondant tools yet. I'm driving up Friday for the night to get more of an idea of what they actually want!

I would recommed taking course I even though you know the basics. I knew the basics but it was still an informative class. Little hints and tips along the way that make it much easier.
