I've seen some cakes (covered in fondant likely) that have hand-painting on them.....what do you use for the "paint"?

You can use melted cocoa butter and your food colors. Look at a book by Mich Turner called Spectacular Cakes. There is one in there. Or just type the words painting on fondant in your seach engine. You will find the answer. I don't have time today to look up the ingrediants or mesurment instructions. I can do that tomorrow or later this eve.

I thin out my colors with vodka or clear vanilla and paint with that. Whatever medium you use to thin out the color should have alcohol in it so it will evaporate. Some people use everclear and I've heard of using lemon extract also.

Either coloring gel, color paste, or dusts mixed with alcohol. the alcohol evaporates more quickly, so it is a very good choice.
