I have been asked to make about 50 roses as a garnis to an apricot mousse. I want to make them out of dried apricots. I know that I need to roll them out in granulated sugar, but does anyone know how to make them? Is it the same process as gumpaste? Thanks for any information.

I have made them with dried apricots but I didn't roll them out on granulated sugar, just sprinkled the rolling pin with a little water, rolled on a Silpat mat to thin and elongate and then rolled them up with the sticky side inside, they cling to themselves as you roll. Much like a fondant ribbon rose. Pinch at the bottom of the rose to open up the petals a bit.

I never thought of those. I love dried apricots......that's something new on my list of techniques to try out.
