Help! Need Ideas!

OK, a potential customer asked today if I could make 180 beignets for 6:30 Thursday morning. ACK! I told her that they are best served fresh and warm (since they're like a doughnut) and b/c I would have to make them on Wednesday that I don't know if either one of us would be happy with the product in the end. Now she wants to know if there is any other cajun-inspired pastry or such that I could do for her instead. She doesn't want cakes (darn!) or doughnuts. HELP! I have no clue! I may live in Texas but I'm from Pennsylvania! Any ideas???? icon_confused.gif

You are right that the beignets will not be nice the next day.

Perhaps bread pudding?

I believe this is for some sort of meeting or conference and she wants something that her clients can just pick up and take with them as they walk. So far, I've only come up with something called Blueberry Breakfast Bars but they don't sound particularly cajun to me. *sigh*

there are a couple of items here that might be "transportable" such as french toast fingers, or quiche. But you could put the item in small bowls with a spoon an they can still walk around.

I would suggest going to foodnetwork.com and looking up my favorite Cajun... Emeril Lagasse! I'm sure he's got a ton of great breakfast recipes! thumbs_up.gif

Maybe rice fritters (calas) or corn fritters? I don't know though, because they're usually served warm with sugar or syrup... good luck!

Edited to add: if she doesn't mind it not being sweet, you could do something like corn and ham fritters - they're very traditional and wouldn't require sugar or syrup.

OK, so she wants Sweet Potato Muffins - about 100 of them! Yikes! I'm making some samples tonight for her to try tomorrow. I have to come up with a quote for her, too, and I'm so bad at that. What do you think?

Ugh, what a mess this has been. I made the sweet potato muffins last night for her to sample today and I had no idea what to expect from them since I had never tasted one before. I like the flavor (My house smelled like Thanksgiving.) but I didn't like the texture - they didn't seem completely done in the middle - so I baked them longer. Well, that didn't do anything but casue the tops to fall and get harder. I thought that maybe that's the way they were supposed to be b/c what do I know about putting sweet potatoes in a muffin? Nothing! Anyway, I packaged them up really nicely and had hubby take them to work where the client was supposed to pick them up. She couldn't make it. Sooooo, I waited all day, wondering if I was going to be working all day tomorrow making muffins. Hubby calls to tell me that since the client couldn't get them like we had planned and that she was going to have someone else in his office taste them for her. Great. I get a call about 5pm from her saying, "I'm going to have to pass this time." No explanation or anything. Just a pass. I told her that I didn't know if they turned out the way they should have and being that I was on such a tight timeline that I couldn't try other recipes, etc. She said she understood but that was it. She said she'd keep me in mind for other projects. Whatever. I told her at the last minute a friend had come up with a recipe for Praline Muffins which sounded really great and I think the client was bummed but, oh well. What can I do? I'm a little ticked right now at her, but mostly at myself for not charging her for the samples (which she did offer to pay for before I stupidly in the beginning) since I ended up giving her (or whomever) the entire batch. I don't think she was very professional and I hope that her clients enjoy their store-bought kolaches! icon_razz.gif

I'm so sorry. All your hard work for nothing. I agree it was unprofessional of her, and don't beat yourself up about not charging for the samples. I wouldn't have either. Hope today goes better for you. icon_smile.gif

I would definitely be a little hesitant to bake for her again. Customers like that you just can't please sometimes. Sorry they did you that way, that was just wrong especially when you were nice enough to provide samples. A lesson learned, you want samples you got'em, the cost will be $______!

Thanks for the kind words! Hubby told me last night that she's kind of a wishy-washy, nondescript person anyway. Her loss! Well, I got a call from my corporate client today for an order so HA HA! icon_razz.gif (I'm so mature!)

Hmmm...now I guess you know what NOT to do when making these types of muffins. Just shrug it off and go on is all you can do, but I'd be VERY hestitant to do anything for her again.

But, atleast she did call and let you know one way or the other....sometimes people won't return calls or anything, so....definitely her loss!!!
