Hey-- I am wondering how long a cake filled with mousse can sit out. It was made by boiling 1 1/2 c. cream and then stirring in about 7 oz chocolate.

Does the boiling of the cream make it less/non perishable? I am asked for this cake often and so I would really appreciate any input! Thanks.

Was it mousse or was it ganach that you used? The recipe sounds like ganache to me. If that's the case then if you leave it out I think I would limit it to only hours out of the frigde. On the other hand if you put it in the fridge, it will eventually harden. If it is mousse and I misunderstood then I would only keep it out for maybe 3 hours tops... not sure on that one either. Hope I helped a little though. thumbs_up.gif

Ganache can sit out for a couple of days.

Mousse needs to be refrigerated.

hey-- thanks for the replies. its mousse made with half cream, half chocolate, then chilled and whipped to the mousse consistency. maybe there's other ways to do it. but i guess i'll go with the "leave out just a few hours" rule. thanks!!

It's still ganache it is just whipped. Mousse is usually made with eggs .
I leave my cakes for hours without a problem.
