I have a couple of questions regarding the above.
First, I have the can of Wilton gum paste mix. The directions say to mix 1 lb, etc, etc. The can is 16 oz, so I have to make the whole can? This seems like a lot!
Second, when I mix it with my fondant, how long will the pieces take to dry? Would it be better to skip the gum paste and just add Gum Tex to the fondant? Any difference?

It depends on what you are making the mixture for. The Witon gumpaste mix is not white/white. Yes, you can use a partial recipe, just weigh the mixture.
Unless you need the gumpaste on it's own for something, I would just add the gumtex to the fondant- mindful that it can impact the whiteness. If you plan to add color, it won't be a problem.
Either way, it will dry overnight. It should be firm in hours if it is rolled thin.
I will be making leaves for a plant so it will be coloured for sure. Will the gumpaste added to the fondant make it stiffer to work with? I find the Gumtex keeps the fondant texture about the same it just helps in the drying and hardening process.
