First Real Grooms Cake...do I Have This Right??

i am making a grooms cake for 7:00 pm, saturday the 18th..


SO, i have been planning on making the cake and filling today (thursday) covering it in mm fondant, and leaving it in the fridge until saturday morning, when i put the decorations on?? im scared if i do the decorations today too they will bleed on the mmf. they are a dark red and a small FBCT.

it will be a devils food cake with mousse filling, so i dont think i can leave it out on the counter that long. (by the way, has anyone ever had a cake with mousse filling? does that work okay?)

how does this all sound?

That sounds like a good plan. I think the mousse filling sounds great.

Yes, I use the mousse filling and when I am in a pinch or not baking for real foodies then I use the packaged mousse from the grocery store. Good for filling cupcakes too. It works just fine. As far as anything bleeding, why don't you try it first on something that you might already have baked. See if that works. If you don't have anything you could always buy a cupcake or two and put your decs on them.

well i have made two practice cakes, and they didnt bleed for a few days, but its so humid in houston that i am just going to wait to make sure!

does anyone have advice on if i should keep it in the fridge or on the counter?
i know if i put it in the fridge it will probably get condensation on it, but i dont know if i can leave it on the counter from thursday till saturday..?

where do you buy your mousse filling from?
