Strawberry Filling....anyone?

I have a wedding cake this weekend. and she wants strawberry filling.
I have a recipe in my wilton book but I dont like it. I was wondering if anyone has an awesome strawberry filling that I can use!!

I buy strawberry glaze made by Marie's the same company that makes fresh salad dressings. Look for it in your produce department of the grocery store. I just slice fresh strawberries and mix in enough glaze to coat them well. It is very good and keeps for ages in the jar in the fridge once opened.

Try this, except substitute strawberry. I used an 18oz jar of Wal-mart brand preserves. I used it to fill cupcakes. The rest I am serving at the baby shower with grahm cracker sticks. This stuff rocks. Use Philidelphia brand cheese because it is softer. Get it to room temp to get it to beat smoother. I also added raspberry flavoring, so if you have a tsp of strawberry flavoring to kick it a notch, mmmm. icon_biggrin.gifthumbs_up.gificon_lol.gif


Rasberry mousse filling

Serves/Yields: filling for 2 9x13 cakes or one thick layer
Prep. Time: 5 mins.
Cook Time: none
Category: Fillings
Difficulty: Easy


1 8oz. brick cream cheese,softened
1 15oz. jar Polander seedless rasberry
1 8 oz. tub cool whip (I use cool whip lite)

Put cream chesse in mixer whip on med for 2 minutes. Add rasberry mix until combined. Add cool whip until combined. Put mixture in refrigerator for 30 min to set.

Mix a high quality strawberry preserve into a little bit of buttercream frosting. This makes a wonderful filling! I made a cake yesterday with Red Raspberry filling made like this. Delicious!

I like this recipe:

1 1/2 cps frozen strawberries
1 TBS cornstarch
2 TBS lemon juice
1/4 cp sugar

Combine all ingredients and bring to a boil over medium.

I've done it with and without making it into more of a puree.

I've used it alone or mixed with buttercream or whip cream.

It's great. HTH.

There are a couple of different ways to copy and paste. If you unknowingly highlighted what you quoted then hit the "control" and "v" keys it would automatically highlight. The other way would be to highlight, hit "control" + "c" to copy, then "control" + "v" to paste.
