Does a carrot cake need to be refriderated right away? I figured once it is frosted it will need to be kept cool since it will have the Crusting Cream Cheese icing on it,.....but if I make the cake in advance and frost it later...does the cake its self have to go in the fridge?

If you are talking about overnight, it would not need to be refrigerated.

if you were doing it several days early, I would freeze it, to be sure it is very fresh when you ice it.

a carrot cake is usually a very moist cake so it'll stay good for quite some time. I've heard that putting baked items in the refrigerator actually shortens the shelf-life as far as going stale is concerned. It does inhibit mold though...

Thanks much!! I have a company order due on Friday. I'm doing 2 - 12x18" sheet cakes, 3 layers, 2 carrot cakes, 3 layers, and 26 cupcakes that are all due on Friday. I was thinking about starting the baking tomorrow, but don't want the carrot cakes to go bad. (I know the cupcakes and sheet cakes will be okay cause they'll have regular buttercream on them), so I was just curious if they should be cooled. I'll probably make the carrot cakes on Wed...and decorate them on Thursday...Thanks!
