Hi-
I have just got my 1st wedding cake order and they want carrot cake as the bottom tier 14 inches, topped with 10 in. and then 6 in. Buttercream frosting maybe covered in fondant.

I wanted to use the doctored cake mix icon_smile.gif

1 pkg. (2-layer size) spice cake mix as box says
sub water for milk
2 cups shredded carrots
8 oz. crushed pineapple
3/4 cup Chopped walnuts
1 cup rasins

I thought it might be too heavy, or something??? Not sure, like I said 1st wedding cake order. icon_surprised.gif

What do you think??

Thank you,
Katie

I make carrot cake from scratch and use it for wedding cakes all the time.

No worries.

Edit to add: mine has shredded carrots, walnuts, golden raisins and candied ginger in it. I have stacked without any issues at all. Dowel and you will be fine.
