Does anyone have tips on making a swimming pool cake? I think I'm going to make a 9x13 size. I'm going to use gray BCI for the concrete and blue piping gel (unless there's something better to use instead) for the water. How do I go about not mixing the colors together? Any other suggestions to keep in mind? Should I put a layer of fondant under the piping gel?

I think you should consider using berry blue jell-o for the water. You'd have to make it and let it almost set, then pour it into the cake cavity (icing underneath of course!) and then put it in the fridge to finish setting. If you don't want to have to refrigerate the cake then you can do the piping gel thing, but who's going to want to eat that part? Piping gel tastes terrible!! If you put fondant under it then at least they can peel it off and not eat the gel. Just my opinion!
In one of my pics I did an outdoor cake & for the pool I used the blue piping gel & around the pool I put cut up white jelli beans you could use any white candy or even little balls made out of fondant, this was done to resemble rocks. None of the color mixed.

You can take a nice sharp paring knife and cut the area you want to remove to the depth you want, then use a spatula, pancake turner, pie server, any flat metal utensil to essentially 'scoop out' the area you want the pool in. HTH!! Oh, and don't be afraid if it is not perfectly flat, you can fill in with frosting, plus with the 'water' on top, people won't see little bumps! OR... if you really want to work hard... you can take a layer of cake the same size as the actual cake, and just cut out the area you want as the pool and then place that layer on top of the cake and proceed. You can torte the cake for a thinner layer if needed.
