i was asked to do a wedding cake, and they want carrot for the flavor and i was wondering if you can still use buttercream as the icing or would it not taste good? And if I did d a cream cheese icing would the cake have to be refriderated? She also wants fake flowers on top of the cake, is there any special way of inserting them or do you just lay them on top? Any ideas would be great!!

Sara
You can't lay fresh flowers right on top of a cake unless you have ensured that they were grown organically and without peticides/insecticides. If you buy regular flowers and dont ensure this is the case, you could be poisoning your cake. Some people put the flowers on a little vase to keep it right away from the cake, but ensuring you get the flowers from a reputable organic grower, will save you having to do this. Plus you can get really pretty designs by being able to allow the flowers to touch the cake, for example the attached picture.

You can insert them (silk flowers) in the cake or lay them on top whatever you want. I just make sure they're cleaned and snip the stems down as far as I want and go from there. Silk flowers come in such a wide variety that design ideas for a cake are almost unlimited.
As far as the cream cheese frosting I believe that does need refrigeration.

I just made the cream cheese icing from the Cake Mix Doctor. She stated that it does not have to be refrigerated but can be kept in an airtight container for 2-3 days. I chose to refrigerate it because it won't be used until Monday morning. I think if you made it that morning and it was served that evening it would be okay.

I think buttercream would taste great if you used at least 1/2 butter and not all crisco.
