I need to find a really great cream cheese frosting recipe. I have a baby shower cake to do which is a duplicate of one I made last weekend and it is covered in cream cheese frosting under the fondant. Well, the last one I made the icing was so stiff. It tore my cake and I couldn't smooth it well. I want something that is like a buttercream consistency but is cream cheese. The recipe I have doesn't say to add any water or milk or anything. Maybe if someone has one that uses water or milk that would be better.
I appreciate any help anyone can give me,
Thanks,
Heather

If any icing is too stiff to use to cover a cake, you can just add water or milk, or even coffee depending on the flavor.

The crusting creamcheese frosting in the recipe forum is excellent.

Whippedcream cheese frosting
INGREDIENTS
1/4 to 1/2 pound cream cheese, at room temperaturev 1/3 cup fruit sweetener
1 teaspoon vanilla extract
1 teaspoon almond or peach extract
2 cups heavy cream

Yield: Frosting and filling for an 8-inch cake

Use an electric mixer on medium-high speed to whip the cream cheese until smooth. Reduce the speed and stir in the sweetener and the extracts until the mixture is smooth and well blended. With the mixer on low speed, add half of the cream. Use a rubber spatula to remove any unmixed cream cheese from the bottom of the bowl. When the mixture is smooth, gradually add the rest of the whipping cream. Increase the speed to high and whip until stiff. Use immediately for the best decorating texture.
