Melting Chocolate So It Is Smooth

Okay, can someone tell me how you get the candy melts to melt smooth? I made cake balls yesterday and used my chocolate pro from wilton to melt the candy melts. Well, when they melted it was smooth and creamy for about 2 seconds then it started to get real thick. It was almost impossible to dip my cake balls. Does anyone have any advice? Thanks a bunch!!

Well I have not used the candy melts yet, but I have added a little bit of butter to my melted chocolate when dipping, it worked real nice. I have also read about adding a little bit of karo syrup too. But the problem you might be having is your chocolate is cooling, and that is why is is thickening. I have read a nice trick on here to keep your chocolate warm while dipping! Place your bowl on a heating pad, the heating pad will keep it nice and warm=) HTH some, if not someone will have some great advice on here! Jen

Thank you Jen. The butter trick sounds good. I will try that next time. I kept my chocolate in the chocolate pro melter the whole time while I was dipping. Maybe it got too hot?

Yep, add butter or oil-----if you add karo syrup you will end up with chocolate clay! thumbs_up.gif

If it gets too hot, or even a mist of water gets into the candy, the candy will seize. You can fix this with paramount crystals, or shortening.

Too keep it melted, you can put it in a bowl over hot water-not boiling.

Once you melt the candymelts, you have to turn off the chocolate pro for a while then turn back on to warm. You also have to stir the chocolate gently after every few cakeballs. Once I remembered to stir the chocolate I have not had a problem.

I have a tempering machine that warms the chocolate and keeps it moving, it's a great investment.
