Ganache ???

I'm getting ready to make ganache for the first time. Looking at the recipes, I see some have different ingrediets and and directions. What is your favorite? And, when it says 12 oz of chocolate, is this the melting chocolate, morsels or bakers squares? Please help. I want to make this cake for two co-workers who are leaving our dept at work. I was told I could do whatever I like and I've always wanted to do strawberries dipped in cholcoate and then the ganache over the chocolate icing. Thank you!

And, the chocolate strawberries. I was wondering what chocolate to use and how soon I could do them?

I use one pint of heavy cream and 24oz of chocolate. I use Dove Dark candy bars (3.75oz). I think any chocolate will work except the chips - they are not meant to melt entirely. I cut the candy bars into about 8 pieces each and put them in my KA bowl. I then heat the heavy cream just until it starts to boil, then pour the cream over the chocolate in the KA bowl. Start mixing by hand with a spatula until most of chocolate is melted. Then I put it on my KA and set it on either stir or 1, with the paddle, and let it go until it is cooled off a bit.

edited to add: 1 pint is 2 cups, or 16 ounces!!

Ive used chocolate chips for every ganache Ive made (Ive used cheapo Walmart brand & Toll house dark chocolate chips)--- turned out perfectly.

I make ganache with semi-sweet chocolate chips all the time and it works great! If you look under my pictures at the chocolate peanut butter cake you can see what mine looks like.

I have used chips also! I like to add corn syrup to mine also for shine. I also add butter.

Maybe I'll try them next time - sounds easier than chopping up bars!

You can use a bag of choco chips...but honestly, I wouldnt use cheap chips....I bought some no name brand at a Grocery Outlet and the ganache was terrible. I just wanted to try them out and I would not do it again. Buy Nestle, Chiradelli, etc....a name ya know.
Use 'cheftaz' recipe....its pretty much a no fail recipe for me!!!

I use chips in mine too!
12 oz choc. chips, 8 oz cream, 1 tblspoon butter, & 1 tblspoon sugar.
Heat the last 3 ingreadiants til they boil. I do mine in the microwave. Pour over chips in a metal bowl. let rest for about 5 min. after that begin stiring. It won't look like it's mixing, but it will, just keep stiring.

I always get lots of compliments!! You can always let it cool for a day or so and turn them into truffles.

I used cheap Walmart brand (Sams Choice) milk chocolate chips one day because it was all I had on hand, and the ganache turned out delicious-- maybe it depends on the cheap brand, but quite a few people commented on how good it was.

I agree it depends on the cheap brand you use. Darlene_000 mentioned Sam's choice (Walmart brand). I often use their white chocolate chips. I have always been told cocoa butter should be one of the first ingredients in white chocolate and Sam's choice has it. Many of the name brands don't. thumbs_up.gif
