i would charge by the gallon. Thats what catering places do. I would make at least 4 gallons. Are you supplying the cups too(size)? Will it be the only drink served? I know catering places will charge $15-30 a gallon for coffee which is crazy but they supply the cups/setup/cleanup and is based on a 6 fl oz serving. So if you are doing that, I would say $10-12 a gallon. It would be hard for them to get 30 cups of coffee for $40. But you know your crowd and if its for church or something you might charge materials plus $20
I charge $8 per gallon for fruit teas and punches. A glass is usually 16 oz and plastic cups are that much or even less. Just a matter of multiplication. I would think 3-4 gallons for 30 people.
I do catering in addition to wedding cakes. I charge $1 per cup for a la carte punch. I provide the punch, cups, punch bowl or fountain. For coffee, iced tea and lemonade, it's also $1 per cup. I provide the coffee pot, cups, sugar, creamer, sweetener, lemons for tea, ice for tea and lemonade, stirrers, napkins, table linens.
1 gal would cover 20-25 people/servings, so I guess that equates out to $20-25 per gallon. I use 9 oz cups (clear plastic) for the punch and cold drinks. I use 12-oz hot cups for coffee. I have a 50 cup minimum for coffee because of the work involved. Coffee is a hit or miss item ... depends on the crowd, depends on the time of day, depends on the weather.
These items are usually purchased with a buffet or wedding cake package, which is how I can provide the fountain and table linens with them. Because I use fountains, the punch is kinda "plain", meaning nothing with pulp can be added. I use a punch base with added fruit juices such as pineapple, berry, etc. VERY LITTLE 7-up or ginger ale .... this really dilutes the punch flavor. If I'm using a punch bowl, I will use 1/3 of a 2-liter bottle of 7-up PLUS a quart of pineapple sherbet and a frozen block of strawberries.
