I know that a lot of you freeze cakes and cookies. This is sometimes really necessary when you have big orders. Do you run out of space quickly because you have to keep everything nice and flat?

Don't forget that after they are frozen hard, you can move them. You can stack cake layers up or lay them on their sides in a row. Frozen cookies can be consolidated into bags or tightly packed boxes. thumbs_up.gif

I am always stacking, turning sideways, balancing!!!!

It's a work of art in my freezer!!!!!

I keep thinking about making some cakes up ahead and freezing them, but I've just been afraid of the results. Do you find that they taste fresh and have the same consistency and moistness if frozen and then thawed?

Please help, I've been doing cakes for a couple of years but usually just bake on demand, and sometimes I get behind on my timelines with this. THanks.

As long as you don't leave them in there for weeks at a time, they are excellent. Never had a problem. It's a good idea to write the date on things so you can be sure of their age.

I had a cake in the freezer for 3 months and took it out and let it thaw. My girlfiend came over and ate half of it before I even had a chance to ice it. She didn't know till afterward that it had been frozen. But I think it would depend on your recipe. I can see some not being good after awhile.

I always freeze my cakes. I let them freeze all the way than I stack them ontop on each other. Ihave frozen cakes for about a month ahead of time! Never had a problem with taste.

I can't freeze anything because our freezer is so small (and full)...we have the side by side freezer/fridge. In fact, this past weekend I made my first two FBCT and barely had enough to get those in! Jodie
