I know that a lot of you freeze cakes and cookies. This is sometimes really necessary when you have big orders. Do you run out of space quickly because you have to keep everything nice and flat?
Don't forget that after they are frozen hard, you can move them. You can stack cake layers up or lay them on their sides in a row. Frozen cookies can be consolidated into bags or tightly packed boxes. ![]()

I keep thinking about making some cakes up ahead and freezing them, but I've just been afraid of the results. Do you find that they taste fresh and have the same consistency and moistness if frozen and then thawed?

I had a cake in the freezer for 3 months and took it out and let it thaw. My girlfiend came over and ate half of it before I even had a chance to ice it. She didn't know till afterward that it had been frozen. But I think it would depend on your recipe. I can see some not being good after awhile.
