Fat Free!!!

i have a lady at work, that ask me to make a cake for her friend. the only restrictions on it are, it has to be totally fat free!!!she has some sickness with her pancreas, and cannot digest any fat. sooo, i thought maybe, a sponge cake, but i dont know how to decorate it. i thought maybe a fat free cool whip, but she wants it decorated really cute, for a 50th birthday, does anybody have any suggestions? if i use a fondant, she could peel it off, but what do i put under it, over the cake? if i cant use a buttercream, what will make the cake look smooth? any help would be appreciated...

you could use jam or piping gel to adhere the fondant to the cake. and my fondant at least has only about 1 tsp of fat (crisco) in it, but I think I could do without in a pinch.

personally, I think I'd go with an agel food cake with whole berries and piped fat free topping liket eh cool whip stuff. You might just need to tell her that there are some limitations given her restrictions and that you can only do what you can do.

What about Royal Icing? You could do your decorations with royal icing. Egg white don't have any fat in then. I know they aren't yummy but you could sure make a cute cake.
