I am sure that their cakes taste great or they wouldn't be in business let alone have a show. I am going to Baltimore this summer and am thinking of emailing them and asking if I can work for free for them so I can watch and learn. Hubby has a conference there and I have to entertain myself.

I love this show so much. I just love any Cake shows. Wish there was only one channel of cake shows all day everyday for 7days 24 hours a day! icon_lol.gif

I have watched everyone of his shows. In one of the earlier shows it showed a baker pouring cake batter into a pan. In all my years I have never seen a butter based cake (scratch) mix that pours. My box mixes though where very loose and poured. So i'm guessing he's a box cake maker. His icing looks like swiss meringue buttercream. I could be way off on this and Duff would probably crack up that we where so interested in his cakes.

I used to work as a decorator for a well known grocery chain, granted it was almost 20 yrs ago but I image the basics are the same. It works like an assembly line - bakers, then decorators then front line (ie: packaging, customer service etc.) Products were order in 20, 40 lb etc. dry ingredient bags, and the wet ingredients would be added in shop. So I guess it could be considered a 'mix box'. I sure miss being able to say "I need 4 sheets of white and 6 chocolate. I'm also low on chocolate b/c when you have the chance." - and then having it all ready for me to ice and decorate that afternoon, or the next morning! At home decorators are doing the job of 2 people (minimum), and if you ask me should be charging more $ for thier efforts! I've been thinking of scratching the 'scratch' and using mixes, I think I'm making it harder on myself than needed.

My chiffon cakes have a pourable batter and they're from scratch. They are put together using the muffin method like cake mixes though, besides the part where you whip up the whites separately. That's a chiffon thing. But yeah, most of my cakes have a pretty thick batter!

Not to drift to far from the original subject....but I have to say on the subject "to use box or not to use box?" I also really torn. I feel like people don't appreciate the effort of my scratch cake. I always wonder of they would know the difference. Any thoughts?

I've tasted one of his cakes. I don't know if it was Duff's or one of the others.....but it was for a wedding in Annapolis, and it was excellent. Funny, back then I wasn't into cake decorating, and so to me, it was just cake (that tasted great!)

Also....why, in the past, have topics about Duff's cakes gotten ugly?

People who didn't care much for Duff said that they were probably not good and then fanatics yelled and screamed and then the non-fanatics called them "thin skinned". . .you know the drill. icon_rolleyes.gificon_lol.gif

My batters are always really thick, so maybe you're right andrea7. thumbs_up.gif

I'm nervous that they wouldn't hold up well. I've never tried a mix for carving or stacking. I would love to have confidence that the mixes would work. I also feel under appreciated for all my 'scratching'.

I"m convinced that no matter what, there will always be someone lurking in the background, just waiting to stir up some controversy!
What is it with people that they need so much conflict in their lives? I don't get it!

And....I'm not a fanatic of any person, but I'd rather hang out with Duff for a day than any other cake decorator I've seen. He's just so cool, adventurous, and young at heart. I need more of that in my life!

I've seen lots of times where he grabs the big tub of buttercream (premade) and he definately doesn't make his own fondant, (remember the one where he couldn't get the fondant delivered) and I think I've seen one show where the mixer was going with buttercream in it (which doesn't mean that it wasn't premade and they were just remixing it or thinning it). I have seen Rich pulling a cake out of the oven once.

No I haven't LoriMC but I would love to taste their cakes. They must be really good!! People rave on their cakes apparently because in one episode I saw Mary and they other lady (sorry I'm new to watching so can't remember her name) but anyway 2 of the girls took a pumpkin shaped/carved cake in to a school or somewhere and in the back ground I heard a lady talking about how good Charm City's cakes tasted. She said something like ,"Mmm, I just love their cakes!" while she was eating it LOL My mouth drools just thinking about how good they must be. LOL

Unfortunately, according to the last three questions of their FAQ page, not only can you not stop by to have a peek, but they also are not hiring "staff, interns, externs, or volunteers". Understandable. I'm sure they get those questions a lot. They did credit Cake Central as a valuable cake decorating/making resource on their website. icon_smile.gif Very cool! I just think the whole staff seems great, they just seem like so much fun!

Can I add my 2 cents?

I've seen two episodes and I wasn't impressed. I watched the cake for the "Science Center" it was a dinosaur blowing out a birthday cake. I was not impressed. Disappointed actually. Mostly because the dinosaur was not eatible in the least. So basically they made a two tiered birthday cake. But if someone was to say "wow look at that cake" very little of it was actually cake. I think for the reputation he has, I expected more.

And the second show I saw was the engine blowing up. Well, very little of that project was actually cake. I'm an amatuer compaired to him, and I could have made that engine.

Anyways, so far I enjoy the show, for the "drama" but I am quite disappointed on how little his "cake" is really cake.

Maybe it will get better?
