Great website, thanks! I added it to my favorites as well as copying a few recipes! I was pleased to see a recipe for piping gel, will try that, I needed some last week and couldn't get to the store for the Wilton (I have an aversion to Wilton products, anyway.)

You're all very welcome! My best friend from Denver recommended it to me (she is a cake decorator also). The only thing I have tried so far is the Strawberry Mousse Filling, but I can't wait to try some more recipes.
BTW, that filling is DIVINE! Dh and I keep sneaking in there and getting a spoonful... I hope I have enough left for my cake, lol.

I just made the strawberry mousse filling, but used sugar-free strawberry gelatin instead of regular. It was fabulous! I used one of those cake pans that has the "tunnel" in the middle for filling. Baked a strawberry cake, filled with strawberry mousse, and frosted with cream cheese buttercream. Even my chocoholic family loved it! Thanks for sharing that site.

Quick question...if I were to use mouse filling for a wedding cake, how long can I actually have it out before the wedding day?? I mean, I torte my cakes with either ganache or buttercream the Thursday before the wedding...but will mouse go bad if left out? And is it good for torted cakes? Will it withstand the weight?? ![]()
I've never tried it, but they all sound so good.
I made and used this mousse Thurs. afternoon and we finished the cake today. It was still good (delicious actually) after sitting on my table, covered with a dome. It is not overly warm or humid here, but I think that could affect the amount of time before the mousse "goes bad".

Thanks for the prompt reply...I think I will give it a try.. I mean, my cakes are fondant covered, and that protects the cake as the dome does...I'll try it now before it gets warmer here...Humidity in this city is 10 times worse than that in the Caribbean!!!
I am planning to make a fresh strawberry mousse filling for a wedding cake in May and was wondering the same thing. Because it's going to be made with milk, I don't think it should be kept out for too long...milk products do spoil at room temp or warmer.
My plan is to refigerate the cake once it is filled and iced, just to be safe. Always heir to the side of caution especially when you are being paid for a cake that is to be served to a lot of other people ![]()
