I'm just wondering what you would charge for a slab cake (3ft long!) that is going to feed 500 people?? It would be 2 layers with a filling and most likely covered in buttercream ( I love mmf but I don't know if I could roll out a piece that big!) with a logo on it. It's for a 75th anniversary of a posh golf and country club!
I don't want to undercharge but I don't want to overcharge either! I've never done a slab cake before and definitely haven't made a cake for 500 people!!!

YES. I AGREE. YOU NEED TO CHARGE BY THE SLICE AND ADD IN AN EXTRA CHARGE FOR SET UP AND DELIVERY FOR SURE. THIS WILL NOT BE AN EASY CAKE TO TRANSPORT. THE GOING RATE PER SLICE IN MISSISSIPPI IS AROUND $2 A PERSON. SO I WOULD CHARGE AT THE MINIMUM $1000.00.

I don't know what I'd charge. If you over do it, you may risk future business, but that is a huge cake. I don't know if I would personally charge by the slice for this type of cake. What would you normally charge for a full sheetcake that was filled and double layer?
I'd take that amount and multiply by three or four, then factor in extra charges for the reinforced board you'll need, and the hassle of transporting such an enourmous cake. I could be totally naive and I'm willing to accept that, but I don't think anyone would pay $1000 in my area for that size cake.
Markets are all different. I know a lot of the members here get more for their cakes than I can in my area (outside Kansas City), so like I said I could be dead wrong, but honestly if it were me, I'd probably charge about $500 for this cake (if covered in buttercream). If there is an extensive design, then I'd factor that in too.

I would probably try and talk them into several smaller cakes rather than one that big. I would tell them they could have different designs on each one and they could have different flavors etc.. that would be too big for me. Good luck!

I am going to try to talk them into having smaller cakes that are the shapes of each of the 18 holes!! I think that would be alot more interesting than a huge slab cake! I have to run this idea by them and see what they say! Thank you to everyone for your help!!!

I would say to stick close to what you charge based on your 1/2 sheet prices. So a cake this size would cost them approx $600 plus transport/handling fees????????
I don't think it would be all that bad to do, just alot of preparation. Keep in mind that if you do separate cakes, you will have a higher cost to you since you will use more icing and more cake boards so charge accordingly.
Maybe you could make 10 1/2 sheet cakes torted and filled them crumb coat and freeze. Make all of your icing and maybe either FBCT or Royal transfers of the logo design or of course edible images if you have that sort of thing and ice, decorate it there? It is no different than taking large cakes to a wedding reception and having to finish it off there ![]()
