Class went well. I tried not to be to scared, and was doing well until I started to talk about collaring a pan--reach down into my box and CUT my thumb on the stupid parchment paper box!!! icon_cry.gificon_cry.gificon_cry.gif I tried my best to ignore it-but you can only ignore blood dripping for so long icon_eek.gif Had to ask for a bandaid icon_redface.gif

Other than that I think I did ok. (Students if your out there now is the time to chime in and brown nose icon_biggrin.gif )

I ran long and did not get to cover icing the cake and smoothing well. That is such an important part I just did not want to rush through it. I will pick up there next week.

I baked a cake, discussed everything associated with it,(flower nail, temp, bake even strips, ect ) made 2 types of icing and 3 consistancies, leveled, torted, filled, and crumb coated.

I am really enjoying this, and CC if you see some new names around tell them HI! They are a great group of people! thumbs_up.gif

I'm so glad it went well! Did you show them your album and did they all bow down to the talents of their teacher?

It sounds like you're doing it right - giving them all of the tips from the ground up so they'll have a good handle on things. And you covered a good amount for one night so it's probably for the best that you stopped where you did.

Now put your feet up and relax!

Good choice. I thought that might happen when I read what you were trying to do in 2 hrs. Better to have too much planned than not enough.

The cut finger is just the sort of thing that does happen. I did that when I was leveling a cake in class. Just add band-aids to your teaching kit and point out that bleeding into the frosting isn't good. Or crack a really bad joke about putting blood, sweat and tears into your creations.

I just added bandaids to my box this AM!! icon_lol.gif

I had intended to leave the albums on the table as I was passing out the list of things to bring next weekat the end of class, however we waited a few minutes on someone to show up for class, and at the same time someone ask if I ever photograph my cakes....We ended up passing them out first. It was a minor distraction in the beginning, but no problem. I think it helped give them confidence in me, and most of them did not realize what is possible with cake.

Good For you, Glad your class went well.
(sorry kind of long).
I agree with everyone.
You want to learn to decorate, but the cake is the base and knowing how to do it and get it preped for decorating is key. Then lots of time to practice and have the teacher show us when we are stuck and it's not turning out. It's so easy to say hold you bag at 45 or 90, but when you look at it, how do you really do it! Sometimes that makes the whole difference.


I took my classes at a baking supply shop and loved it, we were in a kitchen environment, (not shared with feathers and who knows what!)
The first night out teacher brought in a cake (already baked). She took it out of the pan, evened it out, added crumbcoat, filling and just decorated it simply while she was talking about the step to get a good cake. We were all taking notes and had a great time. At 1/2 time we sampled it. It was great.
Then she started to make us practice simple stuff like making a cone and talked about tips and all other products out there. She gave us some minor homework: practice and come up with ideas for making 1 cake on last class. We also ahd to bring in some icing we made one nigth so we could talk about it and find out what we should or should not do. We only had to make 1 cake and bring it in, that was good, we tried all kinds of flowers and other decorations and could use whatever we wanted. It was great. She always had pictures of her cakes (she has a few albums. She also encouged us to bring in pictures of stuff we had done.

I'm one of Kimberly's students and she did a great job! None of us knew this was her first time teaching. She recommended this site so I thought I'd check it out. The only bad thing was when I got home, I wanted to bake a cake but it was a little late for that!
