Mmf Gone Wrong

Well I made MMF for the first time and I failed icon_cry.gif First of all the marshmallow bag I bought was only 10 1/2oz not the 16oz the recipe calls for (didn't know this til I went to make MMF) so I thought I'd compensate thumbsdown.gif , guess I guessed wrong. The texture seemed right, it rolled fine but when I went to use alphabet cutters the got stuck icon_surprised.gif .

Since I needed the MMF right then and there I panicked, tried a couple of more times, still sticking and knowing I had a bunch of letters to make, I ran to Michaels and bought Wilton fondant. I really hated to use this because of the flavor but I didn't have the time and didn't want to waste ingredients.

Any advise from veteran MMF makers/users.

Cake turned out fine, got it delivered showed my mother the photo and she tells me that I didn't spell a word correctly. FYI if you use Babel Fish Translation it always will give you the mascuiline translation you will have to change the o's and e's to a's if it's for girl. Luckily enough this cake was for a co-worker and he's was okay with it.

Rub the cutters with something that prevents sticking, corn starch, powdered sugar or even a bit of shortening.

Then to fix the MMF, just knead in a bit more SIFTED powdered sugar. Sprinkle the PS on your surface roll the MMF out a bit, sift on a bit more PS- don't get carried away with too much sugar.

After a bit more kneading, it should not be sticky.

when i make mmf, i use a smaller version of the recipe posted on here. it is just the right size for decorations & accents. it's also a little easier for me to handle a small batch. plus if i mess it up too bad, i haven't wasted as many ingredients!
1 cup marshmallows (10 large or 100 mini)
1 tblsp water
1 1/2 -3/4 c powdered sugar
you make it using the same steps as a large batch.
for chocolate mmf, add 1 oz melted chocolate or 1 tblsp cocoa powder.

Has anyone had issues with consistency when they color their MMF. My white MMF always turns out great, but whenever I add color, I end up with one big marshmallow after I let it sit, could I be overheating it? ps...I add color while melting the marshmallows and sometimes have to melt it a little more to mix.

i would use crisco or non stick spray on the cutters...that usually works for me

I add the color after the mm have melted, before I start adding the sugar. Sift a bit extra, and hold back some to knead in if necessary once you take it out of the bowl.

I got bright "pepto bismal" pink with no problem.

I made mmf for the very first time a few days ago. I didn't even think about what size my bag of marshmallows were ~ I just followed the recipe I got off of CC. It turned out well, the consistency was great and easy to work with. And the flavor...soo much tastier than WF. I ended up using 5 different colors for my cake. I greased my hands and work surface and did not have any problems...this time.
