I am new to MMF. I need advice on the following:
1) Can gum-tex be added to MMF?
2) What's the shelf life of MMF? I know Wilton's fondant has to be used within 2 months of opening.
3) How far ahead can I make and store MMF accents? 1 week or maybe a few weeks in advance? Does the taste change?

yes, you can add gum-tex, just like any fondant.
If you wrap it carefully-it will last a very long time, and can be frozen for a few months. I found that just plastic wrap will allow the edges to get crusty, so use extra wrap, foil, and a plastic container
the ingredients are basically sugar, so the taste does not change. I have added some flavors at the beginning at they seem to hold up.
Accents, if they are to be hard, can be made weeks in advance and protected from light and dust. Light can fade some colors.
Thank you Jo-Ann. I was under the impression that fondant, MMF or Wilton should not be refridgerated or frozen. While freezing augments shelf life, does it affect texture or anything else for MMF? I know they freeze ready made fondant all the time but most forum memebers stress on not putting it in fridge/freezer.
Freezing or refrigerating fondant is a potetial problem, but if you anticipate the likelihood of it sweating, and allow time for the moisture to evaporate, it is fine. If you take your lump of fondant out to use it, you have to allow time for it to dry, or it will be too wet and possible sticky.
If you put fondant on a cake that needs chilling, when you take it out, it make sweat. If you don't touch it until the moisure dries, you won't know the difference. It just takes a bit of planning.
That said, it should be fine well covered on the counter for at least a couple of months. You have to protect it from drying out or exposure to light.
