What Kind Of Filling Would You Use For This Cake?

I have been asked to make a Snickerdoole flavor cake and I was wondering if any of you have made this cake, what kind of icing, besides a cinnamon buttercream, would you use. Would you use a different filling?

Here is the recipe I found:
Snickerdoole cake
1 Pkg plain white cake mix
1 cup 2%milk
1 stick butter, melted
3 large eggs
1 teaspoon pure vanilla extract
2 teaspoons ground cinnamon
1. Preheat oven to 350*.
2. Grease & flour pans (I use cake release).
3. Mix all ingredients in mixing bowl on low speed for 1 minute.
4. Stop mixer & scrape down sides of bowl.
5. Mix on medium speed for 2 minutes or more if needed.
6. Pour batter in 2-8" or 2-9" pans.
7. Bake cake about 27 minutes or till toothpick inserted comes out clean.
8. Let cool 30 minutes before icing.
ICING: Cinnamon Buttercream Icing
1 stick butter, at room temp
1 lb bag confectioner's sugar
3 to 4 tablespoons milk
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
I have never had a cake like this, but I would be curious to try cinnamon buttercream. Why don't you want to try it as is? I agree with everyone else that cream cheese would be a good alternative.
I agree with the others and would stick with the cinnamon buttercream or substitute with cream cheese icing. I think using a different filling might take away from the cinnamony-snickerdoodle goodness! Mmm...I love snickerdoodles...definitely making this for my Mother's Day cake! Thanks for the idea!! ![]()
