Is slated to be April 19. I still have a million things to do, a big empty space, and loads of errands to do. And paperwork to fill out. And make lists of the lists I have.
And I keep booking weddings like crazy! I already have 75% of my weekends booked for the rest of the year!
A new client of mine is having a "green wedding"; her cake and desserts (and dinner) is entirely organic ingredients. She got me thinking about expanding my menu to include organic baking; it's a hot market in this area, apparently.
Also, the only other bakery in this area just officially closed...okay enough rambling...
Back to work for me!

I have recently seen a newsprogram that was talking about "green weddings" It is a big trend right now and if you can "jump on that bandwagon" you should. From what I saw, you can charge more just because it is "green". (Not that money should be the only reason to do it.)

I think expanding into organic is a great idea. I have read in several places that organic, vegetarian and allergy free are great markets to get into. And personally I think that the organic market seems like the easiest to deal with. Not too many peoplel are going to sue you because you slipped up and used regular butter!

Congratulations!!!!!! I was looking at your website and read the testimonial that you recieved from the bride. What is really weird is my brother in law is named Brandon and he married a Maria. That is so odd. 
Congrats!! I think getting into organic baking would be great and you definitely should. I'm currently experimenting with vegan/organic cake recipes so that when I find a place to set up shop I can offer them as well. I've been vegan/vegetarian for 6 years and have would love to have a "green" wedding myself.
