just a though, as I dont know how detailed and how much work you want to put into this...but since it is a chance to show off your work I am assuming a lot of work. So how about one of those castles on top of a cake that looks like a winding mountain and if you are good at molding a knight on a steed going up the cobblestone road that winds around the mountain?

I did a cake for my daughter's birthday (but unfortunately cannot find a decent picture of it anywhere), where I covered a round cake with white fondant. Then I marbled "clouds" with blue, placed them on the cake and painted silver stars randomly. For a cake topper, I molded a castle out of white chocolate. It looked really cool -- I got the idea from a show on he Food Network about Disney wedding cakes.
Don't bother trying to find a 3-d castle candy mold, though. It would seem they don't exist. So I just made do with an extra large mold.

I don't know if this helps but every year they do a renaissance festival where I live. It runs for a month and every weekend is a different theme. One of the most popular things they do is a living chess match. they also do jousting, jesters running around, dragons. How about making a cake like a catapolt. I hope this helps

Freedsbakery.com has a nice castle cake in their gallery. It might be a little different to do a sheet cake and then construct the castle of color-flow panels, like this one.
I'm thinking about entering the same show but I asked if our cakes have to be that theme and was told no they don't! I would imagine sticking to the theme will definately score more points though! I wouldn't want to be over looked!!! I too have no clue as to what to make!!!!! I'm stumped!!!!!
