Freeze Cakes

What is the best way to freeze cakes and how long will they last in the freezer? And is it better to ice the cake while it is still frozen or wait until it thaws out...There will be a black border on the cake, so I just wanted to make sure. Nothing would ruin the cake faster than condensation on my black icing.

I don't like to freeze my cakes too long. I usually bake/freeze on a tuesday and then defrost on Thursday and decorate on Friday. I have never iced a cake frozen before but I have torted a cake when it was still semi frozen, which worked nice but I have never iced one like that before.

I've been trying to find out more about freezing cakes as well. On the baking 911 website, they suggest wrapping cooled cakes in plastic wrap, then aluminum foil, and then placing them in a large plastic bag to protect the cake. They also post a timeline (for a cake needed on a saturday) that suggests taking the cake out to thaw, in all its protective wrap, thursday morning and then decorating on friday. I hope I remembered this correctly and this helps! Also, I would do the black last so there won't be any chance of ruining the cake. Good Luck icon_biggrin.gif
