Ok I have a question about fillings. I love doing them they spice up any cake but I have to take cupcakes to a family that just lost thier grandmother and I am sure they will not have room in thier fridge for any cupecakes. Is there any fillings that don't have to be refrigerated? Any recipes before thursday would be greatly appriated!

Premade pudding, is a worth a shot! You buy it at room temp so no need to fridge it! Good Luck.

Regular buttercream doesn't need to be -- especially if you use the kind without milk. But, I leave out the kind with milk, and it's fine. It's only got 2-3 TBS, and it's fine.

Any fruit filling without whip cream is fine too. There's some really good strawberry fillings that aren't too much work. But, fruit can be kind of expensive.

You can use Flavor Rite or Pastry Pride and mix it with fruit for a good mousse-like filling.

A chocolate without whip cream too is good.

Those are the first few that come to mind. Good luck and hope this helps.
