Dummies, which are styrofoam blocks, are made for display cakes and for practice. A lot of the cakes that are entered into compititions, are dummies. You can order them online (just google cake dummies) or your local cake supply may be able to order them if they don't carry them.
Cake dummys are normally a sealed styrofoam in the shape of 4" cake layers. they can be used for practice for demos, and for display. Often competition cakes are required to be constructed on dummies, so they can be preserved.
You can find them in most cake decorating supply stores and on-line in several places.

I also use them to make a smaller cake look bigger and more elegant. Had one where she wanted a double wedding cake connected by the bridges/stairs, but that design was not possible for a wedding for 100. So the cake on the left was styrofoam and the cake on the right was the real thing (in my photos).
I have also heard of people pressing the rice crispie treat recipe into a greased pan to shape and using that as a dummy cake! (If you can't find the syrofoam)
