What Do You Fill Your Cakes With???

Sometimes I just use butter cream.
But most times I like to use homemade custard or pudding, flavored to match the cake.
I have also used preserves, or fresh fruit.
I've never tried anything but the buttercream I am icing my cake with. I really should branch out and get creative. ![]()
I've wanted to use mousse but I'm paranoid about the safety of it, I have no idea how long it stays good inside the cake and how long it can be out without refridgeration.
I actually just picked up a jar of butterscotch ice creaming topping to go inside a couple of chocolate cakes I'm doing for valentines.
I normally use Buttercream but if something else is requested I will do that.I try to stay away from fresh fruit fillings and slippery fillings like bavarian cream etc as they cause the cake to get mushy and the layers can actually slip off in transit!

You can...but the strawberries will give aff a natural saturation meaning.....bleeding and your icing could become runny.I would use Strawberry Jam!
