My sister and I have a baby shower cake to finish Friday (the shower is on Sat but they are picking it up Fri night). They want white cake and fresh fruit filling with whipped cream. Brown cake with pink decorations and a silver tiara.....

Well...we are planning on making the WASC cake with nutrawhip (like Richs Bettercream) and sliced straw or whole rasp BUT we are covering it in brown fondant hence the problem......what about refrigeration and will the fruit go yucky and will the fondant (mmf) really get scary??

Any suggestions??

TIA

Cindy

Fresh berries have a short life once you cut them. If you add them at the last possible time, and keep it refrigerated, it might be OK

You can refrigerate fondant. Just be sure when you remove it from the fridge, the room is cool. It will help lessen any condensation.
