I see so many cakes with the wired accents sticking out from the top of the the cakes...and I love that effect!
Can someone please give me details on how to achieve this? Including what kind of wire and whether it is left bare or covered...if the stars are fondant are they dried? How do you apply them to the wire? Do the wires show from behind the accent?

It is important for you to stress to your customer that the wired stars/hearts/whatever are NOT edible due to possible contamination from the wire and potential choking hazards. That said....
Use floral wire and stick them into the edges of your fondant cutout and then leave the thing to dry, turning it over after a day to dry the back. Dust or paint them if desired.
When it's time to decorate the cake, for safety's sake, do not insert the wire directly into the cake. Instead (for instance, if the wired accents are to be a cake topper) insert a hollow plastic cake dowel and put buttercream inside the hollow dowel. Then you can insert the wires into that and tell the customer to remove the dowel with the wires intact and throw the whole thing away.
If you are putting the wires into the sides of the cake, I like to use plastic drinking straws and use the same fill-it-with-buttercream technique as above.

Yes, even if your wire is taped with florist tape, it should not be inserted into the cake directly. You are better off using cookie sticks, wooden shiskabob skewers, toothpicks, straws if there will be contact with the cake and some things like chocolate transfers and such will still be edible as long as there is no risk of anything breaking off into the decoration and being ingested, like a piece of wood.

something very important also, when attaching the stars, hearts whatever to the wire bend the tip of the wire back down so that when the stars, hearts whatever are dry, they dont fall off!!!
