Help With Freezing, Please!

I have a last minute cake order, actually this is only my second paid cake. She wants the cake for March 18th, but I will be out of town the 15th through the 19th. I explained to her that I could bake and decorate her cake, wrap it well for freezing, and she could pick it up on the 14th, before I leave town. She has freezer space so this won't be a problem.

She was wondering about the freshness of the cake and I assured her that it would be fine, properly wrapped for 5 days. (Please tell me I'm right! icon_cry.gif )

This is a quarter sheetcake, with a frozen buttercream transfer. All buttercream icing with simple borders and writing. How does it sound if I place the cake finished, in a cake box, then seal it with saran wrap or freezer paper? If anyone has any ideas on this, I would surely appreciate it.

Also, when it comes to her thawing the cake for her party, what would be the best method? Thanks so much!

Freezing the cake will be no problem. I actually have one in the freezer that I made a week ago and will be taken out for tomorrow. Just wrap it very well 2 or 3 times.

As far as thawing, after taking it out of the freezer leave it wrapped until it is completely thawed. If she took it out the day before to thaw it would be fine.

I have read here at CC to put the boxed cake into a paper bag then seal that with saran/plastic wrap. They say the paper absorbs the odors and keeps the cake from freezer burning over a long period of time. Since here cake is only going to be in the freezer for a few short days I wouldn't worry about it to much and would think placing it in the cake box then wrapping in either the plastic or paper would be fine.
Keep in mind I have never frozen a cake and only know what I have read about freezing them. icon_biggrin.gif
