My name is Lisa and Im new to the forum ,I can tell I will learn alot from every one , Ive been making cakes for friends and family for about five years and catered a few weddings ,never had enough money to open my own place icon_sad.gif cant operate out of your home in Ga .

Can someone tell me where to find modeling chocolate?

Welcome to cake Central. I think there are some sources for commercial chocolate clay, but it is easy to make

One of the standard recipes calls for 14 ounces of chocolate or candy melts and 1/3 cup of clear corn syrup.

Gently melt the chocolate, stir till smooth. Stir in the syrup, just until blended. pour it out on a flat surface like a silpat or waxed paper. Let it sit until it is cool, for at least a couple of hours, better overnight.

then knead it until it is pliable and smooth. It the oils separate, you may have overmixed or over heated the chocolate. Some can be kneaded back in. If you remove the melted fat, the clay will be too dry.

Welcome, Lisa! You're gonna love it here!

For modeling chocolate, melt one package (14 oz.) of chocolate candy melts (Wilton or other brand), then add 1/3 cup corn syrup. Pour this on to some Saran/plastic wrap, cool a bit, wrap tightly, place in an air tight baggie and let it rest overnight. Then....have fun!!!
