Okay so I've decide to try to eat more healthy. It's not that I really eat all that bad, my biggest problem is cokes and that I don't eat 3 meals a day. I'm doing good to eat 2, and it's usually one and a snack. Yep I know, not good for ya. icon_sad.gif

So I was wondering, what is everyone's favorite (healthy) breakfast? I'm looking for quick and easy, since I'm not a morning person. Also cheap would be nice too. icon_biggrin.gif

Also if you want to throw out any healthy snack ideas that you love, I'd be most thankful!

instant oatmeal

waffles I mass produce myself (take a Sat a.m. -- make a BIG batch of batter and bake away....and freeze the extras) mine always have pecans in them. and served w/ banana slices & light syrup

ditto for pancakes (tho' no nuts)

all above served w/ large mug of tea and small glass of cranberry juice.

Yes oatmeal is just so darn good for you, even lowers cholesterol. Orange juice or cranberry or a combination. 1/2 banana for that potassium unless you have health issues that prohibit it. Even a tablespoon of a natural bran or wheat germ as a topping for that oatmeal. Cream of wheat is good too, lots of iron in it. Dare I say it, yogurt especially a brand like Source, not that I follow this but it is so good for you, doctor it with a bit of fruit. A tablespoon of nuts, (why are we not surprised, haha) for protein.

I have this almost every day for breakfast. My favorite way to do it is make it up the night before and use frozen berries. My recipe is 1 cup lowfat yogurt, 1/2 scoop of protein powder, a few chopped nuts & then about a cup or so of frozen raspberries or blackberries on top. By the next morning, the berries have thawed and it's the most delicious sweet juice that I stir into the yogurt. icon_smile.gif

Thanks ya'll!! I do like oatmeal and yorgurt. Pancakes are good, but then I like alot of butter on them, especially since I'm not a syrup fan. icon_redface.gif

This gives me a couple of choices to alturnate between!

Just add water to regular oatmeal. Nuke it and it becomes instant oatmeal.

My mom is addicted to yogurt with raisin bran mixed in for breakfast. icon_razz.gif

I will throw cheerios or shredded wheat in a ziplock baggie to eat in the car. Apples and bananas are cheap, filling and easy to tote around.

Howdy neighbor! I see you are in East Texas...where exactly? I'm in Lufkin.

I wanted to share a recipe with you from my church cookbook that I make a lot for breakfast. It's quick to make, healthy and tastes great!

BANANA PEANUT SMOOTHIE

1 ripe frozen banana
1 cup milk
1 Tbsp. honey (optional)
1 Tbsp. peanut butter (I use 2 Tbsp.)
1/4 tsp. cinnamon

Slice banana into blender. Add milk, honey, peanut butter and cinnamon; whirl until smooth.

As for snacks, I usually do dried fruit or granola bars. thumbs_up.gif

I just recently almost encountered something scary.. Hubby was at the Dr. office and they said that his blood pressure has been way to high.. So they did an EKG and they said it came back abnormal.. I just started crying, hubby is only 33. So anyway we go to the heart Dr. They did a stress test and we waited patiently for a week to get results on the stress test and the blood work.. THANK GOD it's just his cholestrol to high.. So from one wee to another we had to change our eating habits.. Hubby only drinks water, he has been doing this for about a year now.. No tea, no cokes OMG no kool-aid.. I can't live without grape kool-aid. LOL ANYWAY.. we switched from ground beef to ground turkey.. we switched from reg. milk to 2%milk. we switched cereals, we now use Special K.. It really is sweet! we now buy oatmeal with 0 cholestrol.. (it reads good for the heart!). we dont eat any red meat.. we bake everything we eat.. or grill.. Of course I still have my kool-aid.. But I tell you what.. In 2-3 weeks hubby lost 12lbs and I lost 7 lbs.. I was OMG!!! it's all about eating healthy.. you have to change for good, not for a month! I dont eat 3 meals either.. But I do eat a sensible dinner.. I love this for breakfast

and splenda to taste..
blend it and it's the best shake ever!! healthy too!

HI kiddo,
Just wanted to mention that eggs are high in cholesterol and used to be limited to three a week but recent recommendations are often to limit your egg intake to 2 per week or to switch to egg whites since the cholesterol is in the yolk.
Cholesterol issues are not fun and can be hereditary with many young people having high counts of bad cholesterol. Good for you both changing to a healthy diet!

Thanks for that.. and yes, I make the boxed egg whites for hubby.. But I sneek an egg or two for me.. He has way more will power than I do.. I don't cheat myself , I just don't deprive myself.. icon_smile.gif

I like making smoothies with frozen berries and Stonyfield farm vanilla yogurt.

Oat bran and steel cut oats are a fun alternative too. I love oat bran with maple syrup or brown sugar. Steel cut is good with rasins and cinnamon or dried cherries.

Kashi products are also very good and easy to make. They have cereals, instant oatmeal, cereal bars, etc. All high in fiber, low fat, and I think organic. Puffins is another brand of cereal that is good for you but has a fun taste, that kids, or kids at heart would like. (The peanut butter is good!)

..don't know if you are a fan of flaxseed but there is a great receipe for muffins, on the side of the Uncle Sam's cereal box. I make up a double batch of those babies, pack them in twos in ziploc bags and freeze. At night I just pull out a bag and they are on the counter waiting for me in the morning! If you are interested in the receipe I will be glad to post it here!

Sure! The first recipe is from the Uncle Sam Cereal Box. The second recipe is my modified version (and the one I use!)

Morning Muffins (as listed on the cereal box!) Makes 24 muffins

3-1/2 c. Uncle Sam Cereal (whole grain wheat flakes & whole flaxseed)
1-1/2 c. sugar
2-1/2 c. all purpose flour
2-1/2 teas. baking soda
1 teas. salt
2 medium eggs
3 teas. lemon rind or orange rind
1/3 c. canola oil
1/3 fresh orange juice
1-3/4 c. buttermilk

Preheat oven to 375*. Line cupcake size muffin tins with paper baking liners.

In a large mixing bowl, combine cereal, sugar, flour, soda and salt.

In a separate bowl, beat the eggs slightly. Beat in the lemon or orange rind, oil, orange juice and buttermilk. Stir into the dry ingredients and mix well.

Fill the muffin pans 1/2 to 3/4 full and bake at 375* for 18-25 minutes, until tops are golden brown.

Here is my revised recipe. The directions are the same, but I have changed the ingredients a little. Also, I go by weights!

4.5 oz. Uncle Sam Cereal
3 oz. quick or instant oatmeal
.9 oz. Splenda
3.5 oz. sugar
12 oz. flour
2-1/2 teas. baking soda
1 teas. salt
2 medium eggs
1 teas. grated lemon peel
2 teas. orange peel
1/3 c. Canola oil
1/3 c. OJ
1-3/4 c. buttermilk

I'm addicted to these Egg Mock Muffins I found in a cook book.


Split and toast an English muffin

Spray a microwave-safe bowl (about the same diameter as the muffin) with Pam or whatever. Place a piece of canadian bacon in the bottom of it. Then pour 3 beaten egg whites on top. Salt and pepper if desired.

Cover loosely with wrap and microwave for a minute. Take it out and stir the eggs. Nuke it for 30 seconds more. You do this until the eggs are solid and not runny anymore. Depends on your microwave as to how many times it will take.

Once the eggs are done, take them out and immediately top with a slice of cheese. Dump the whole thing out on to half of your toasted muffin. Add the other slice of the muffin and yum!

Very satisfying!

TexasSugar, I have a few suggestions for you based on what I do. I've lost 25 lbs and all of my clothes fit again.

1) Eat apples. Aim for 3 a day, preferably 30min-1 hour before your meal (except at breakfast, then you can eat it with your breakfast)). They act as a snack, but are super good for you, very inexpensive, and are filling. You can eat them a million ways, too: out of hand, sliced, dipped in Fat Free cream cheese dip, FF reduced calorie caramel dip, hersheys choc syrup, sprinkled with cinnamon and sugar, etc, etc.

They actually work better than a cup of coffee or a coke at keeping you alert/awake in the morning--most people don't know that.

2) Eat oatmeal. 1/2 cup oats, 1/2 cup boiling liquid: presto. You can use it a million ways, and it is really healthy, and tastes good. (You can slice up apples and use cinnamon/sugar as a topping). Some toppings I use: fruit preserves, nesquick chocolate drink mix powder, chopped dried prunes, any fruit, canned pie fillings (natural), brown sugar, ,nuts

3) Drink a smoothie- here's my favorite:
-1/2-1 cup unflavored natural yogurt
-1 frozen banana (I buy them on clearance at the store--cheaper and don't have to wait for them to ripen well to get the extra banbana taste), peel, slice and store 1 banana per freezer bag in the freezer
-1 tbs freshly ground flax seed or wheat germ
-frozen fruit of choice (3/4 cup blueberries or 7-8 strawberries or 1/2 cup raspberries or 1 cup tropical fruit mix, etc--use more or less fruit to your liking
-approx 1/4 cup liquid--soy milk, orange juice, cranberry juice, apple juice, water, reg milk, you can use anything

I use my stick mixer (braun emulsion mixer) and layer the ingerdients in the mixing container (like a glass) it came with:
yogurt, then frozen fruit, wheat/oat germ or ground flax seed, frozen bananas, then add the liquid...mix. If it is too thick, add more liquid.

It takes less than 5 mins to make and is really, really good and very versatile. I usually use zip lock freezer bags and slice up one banana, add 3/4 cup of frozen fruit and my ground flax/wheat or oat germ, seal the bag and put it in the freezer. Then when I want to make one, it is even faster (less than 2 mins start to finish) to make- just add the yogurt and liquid.


4) make up a big batch of muffins (allrecipes has a ton of really good healthy muffin recipes using oats, flax or ground carrots/shredded apples)
and freeze them. Pull one out the night before and put it in the fridge or on the counter. Breakfast is ready to go when you walk in the kitchen.

And lastly

5) Drink tea-hot or cold. It is chock-full of antioxidants and is really good for you (and your teeth). The best way to drink it cold is to brew your own (concentrated) and then shock it with lots of ice cubes to rapidly cool it, then dilute with cold water. Store in the fridge. (If you don't rapidly cool it and just let it go cold by itself it will be bitter).

PS: When at home I always made the mock muffins in bulk, too--baked in a muffin pan and stored in the freezer. Just pop one in the micro while toasting the whole wheat english muffin or bagel. They are really good.

I have instant oatmeal every morning at work. I just keep a supply at work. I get to work at 6:15am so I have a mid morning snack of granola. Back to Nature makes some delicious flavors. I have been on a vegetable soup kick for lunch and my afternoon snack is fruit and nuts. If I feel like desert before bed, I have a bowl of cereal. I guess you could say I eat 5 to 6 meals a day but they are very small. I feel like I am constantly eating but I have to eat like this or I will get weak and grumpy between meals.

My father is diabetic so I make no added sugar muffins when I visit him.

Sorry, no beer is not healthy icon_lol.gif But my Dr. told me and DH wine was good. He had to make the switch. Not that he was a drinker, he was just told his cholest. was too high, so he gave me (the boss icon_rolleyes.gif ) the laundry list of how to bring it down.
My fav bfast meal is a half carton of Southwest Egg Beaters. It already has all the goodies in it, peppers, cheese and egg, you just pour it in a pan or micro and Bam! Healthy meal in minutes with only one pan to clean!

LOL we read that for every bud light my hubby wants to drink.. He has to run on the treadmill for 23mins. to burn the "beer fat" off..
P.S. I know raw eggs are not very good for you, but that is how my dad use to make it for us all the time.. And you know it would be wrong of me to make it any different! lol
