Just wondering when using your KA mixer what attachment do you use?
OOPs forgot to say when you are making royal icing!!!! To much going on that I forgot to put that in. ![]()
I have used the paddle and it turned out fine but I think I'll try the whip next time.

the whisk - you are making a meringue, essentially.
If you were making a meringue, in which you want to incorporate a ton of microbubbles into egg whites, you would add a little bit of sugar for taste. In royal icing, the egg white is added to harden the icing, and must be worked/beaten/stretched by the beater...you most definitely are not trying to incorporate air into royal icing. Could you imagine trying to pipe flowers or do extension/stringwork with bubbly royal icing? ![]()
Anyhoo, I'd trust Colette Peters - she uses a paddle attachment. ![]()

i would use the paddle attachment because you don't want to put to much air into the royal icing. the whip will add air. but i guess if other people use it maybe it does work fine
