cryssi, I was just about to post about the Ben & Jerry's Black and Tan too when I realised you already did. I am absolutely addicted to it, it is delicious. In fact I have spent the afternoon researching the web for recipes for Guinness ice cream which I want to make for my St. Patrick's day party.
With regards to finding beer cake recipes I would try and search for Guinness, (or stout) and cake and see if anything comes up. Stout style beer I would think would work very well in cake, it has a nice "dark" malty flavour which would certainly compliment chocolate. Good luck, let us know what you come up with!

erlyns!! i just had an idea! (sorry, i was excited when i thought about it)
when you make the cake, you should make it in the shape of a beer can!! or either bake smaller cakes like the talk about using soup cans, and make it into a 6 pack
thats funny you say that the guy im doing it for does want a six pack and somehow sitting on a bed of ice????
I don't think it will be gross. Beer bread is quite good. I am making this one for St. Patrick's Day but different icing....
For the cake:
1 cup Guinness
1 stick plus 2 tablespoons unsalted butter
3/4 cup unsweetened cocoa
2 cups superfine sugar
3/4 cup sour cream
2 eggs
1 tablespoon pure vanilla extract
2 cups all-purpose flour
2 1/2 teaspoons baking soda
For the frosting:
8 oz cream cheese
1 1/4 cups confectioners sugar
1/2 cup heavy cream
Preheat the oven to 350, and butter and line a 9 inch springform pan.
Pour the Guinness into a large wide saucepan, add the butter - in spoons or slices - and heat until the butter's melted, at which time you should whisk in the cocoa and sugar. Beat the sour cream wiht the eggs and vanilla and then pour into the brown, buttery, beery pan and finally whisk in the flour and baking soda.
Pour the cake batter into the greased and lined pan and bake for 45 minutes (to an hour) in the 350 oven. Leave to cool completely in the pan on a cooling rack, as it is quite a damp cake.
When the cake is cold, sit it on a flat platter or cake stand and frost. Lightly whip the cream cheese until smooth, sift in the confectioners sugar and then beat both together. (You can use a food processor for this step, but just blitz the cream cheese first, before adding the confectioners, to smooth out the lumps.
Add the cream and beat again until it makes a spreadable consistency. Ice only the top of the cake so that it resembles the frothy top of a pint of stout.
I just looked at the title of this topic and all I can say is: GGRROOSSSSS!!!!!
This belongs in the catagory of "Why???"![]()
I found a choc. cake that uses Guinness. Check out "Chocolate Stout Cake" at www.epicurious.com
Ya gotta try this recipe, I have made this cake many times and it is DELICIOUS!!! You do not taste the 'beer' at all, however the power of suggestion will make you think you do. I made it for a big birthday party and didn't tell anyone what it was made of and they all loved it and were astonished to find out it was made with Guiness beer. Iced with chocolate IMBC and it was heaven! My MIL will not hesitate to tell me if she likes or dislikes my cakes and she really enjoyed this one, and she DESPISES beer!
Don't know til you try it!
Ok...sorry, I just read through the whole thread and all I have to say is...come on guys!! Think outside the box!! DH and I both love beer...all kinds of beer...(mind you we ARE Canadians LOL) and I think it's a cool idea...something different instead of same old same old!! I say go fofr it! and I think I'm going to try it as well, it'll probably go really well with the recipe I have for Guiness beer ice cream...yummyyy!
the epicurious one is slightly different and makes more. It also calls for a whipped cream icing as opposed to a cream cheese one.
And mthiberge is so right, think outside the box for sure!
Chocolate Stout Cake is very good. Iced with chocolate bc, it is delicious! They do make chocolate stout or even raspberry beer, which are really good. I had my doubts at first, but I will usually give any drink at least one try, I was pleasantly surprised.
A friend made espresso beer now I loved that too! But then I digress....
Has anyone made the Epicurious cake? I was going to make the one I posted. Checked the epi one and it has 2 cups of butter in the cake! Doesn't that sound like a lot of butter? Even if I double the one above, it would be 2 sticks of butter. Just wondering....

AMEN to that.... My mom always said "don't knock it til you've tried it".
The blend of flavors might be very interesting and not just taste like beer - for those who don't like beer.
I think it could work. I didn't read all the replies but I have to say there is a small ice cream place near us that makes a homemade Sam Adams ice cream and it's awesome. It's kind of beer flavored and cream flavored like a root beer float only with beer if that makes any sense.
I say go for it! You are making me want to try it just to see what happens!
WOW... I personally do not like beer, but I do love chocolate... you have given me a craving to try this... My brother loves beer; I think it will be appropriate to make the Guiness chocolate cake for his birthday...
& Doug, those are great links; I plan on saving those & let my brother do a few taste tests.
thank you
ciao
I baked up the Epi Chocolate Stout cake yesterday. It smelled fantastic and baked up beautifully. The batter was yummy too. I think the stout combined with the cocoa gives it a kind of bittersweet taste .... We eat it tomorrow for party.... let ya know how it goes over.... So far so good.
You're gonna love it!!! Just don't tell anyone what the 'secret' ingredient is or they will say "Oh, is that what I'm tasting?" or they will turn their noses up at it before even trying it. Just smile and ask how they like it and I guarantee their faces will drop when you do finally tell them...."Really?!? BEER?!?!? I never would have known!" (followed by a surpsied shaking of the head as they walk away eating another bite just looking for that beer taste).
Oh the fun to be had!!!! ![]()
Cake was fantastic! Great texture, moist and wonderful flavor! Filled with chocolate Irish cream mousse...topped with IMBC with hint of orange and Toba fondant also hint of orange.... see my pics! (please). I am fairly new to all this but I think it came out pretty good.... We are our own worst critic. Top cake is Lady Baltimore white from Syliva Weinstock with Baileys Irish cream mousse. No one detected the beer flavor but the overall flavor was delish!
I am not suprised that the beer cake came out good, at all in fact. Beer is one of the most misunderstood food products in the United States. As Americans, we have been force fed the idea that coors, miller, and bud products are all "good american beer". That is the furthest thing from the truth.
Instead of even Guinness, if you are going to make a chocolate cake, I would recommend an imperial stout if you have any available in your area. The body is full, roasty, sweet (chocolate) and delicious.
For all you people who "shudder" at the idea of beer in cake, or gasp...in any other food: Almost anyone who enjoys a glass of wine or coffee can and would enjoy beer, especially as ingredients in food. It's not that you don't like beer, you just haven't drank the beer you like yet...
I totally agree! The marriage of the flavors of stout and cocoa are delicious.... I will try your Imperial Stout suggestion if I can find it. I had a friend who made beer as a hobby. He made an espresso beer that I thought was to die for....
There are a couple of imperial stouts that are available in your area that would work well: Alesmith Speedway Stout (stout brewed with coffee), North Coast Old Rasputin Imperial Stout, these are not imperial but: Rogue Chocolate Stout, and any oatmeal stout.
If you live in Southern California, you can get these at Bev Mo, which is a chain spirits store, or search out specialty beer/wine shops.
OMG.. the Chocolate Stout Cake from epicurious.com is TO DIE FOR.. I love it.. and I don't like beer.. not even "good" ones. It's the bitterness of it. I don't like coffee either but do like wine. You can taste the stout in the cake, but it's subtle and enhances the chocolate flavor so nicely. It's moist and sturdy and just an overall wonderful cake. I use this recipe from epicurious.com. http://www.epicurious.com/recipes/recipe_views/views/107105 There are two.. I haven't made the one with prunes.. but I love prunes so you never know.. LOL It's wonderful with the ganache icing listed with the recipe and a nice chocolate mousse inside.. it makes a boat load of cake though.. 3 nice and full 8 inch rounds.. so 1/2 it if you want to try it out..
I just went to www.cooks.com which is must 2nd favorite site and they have 42 variations of beer cake recipes. Good luck
