I've tried it--it does work. I always worry about the artificial after-taste of the sugar sub. You might want to do a small sample cake to see if you can detect an off-taste. I didn't, (cheesecake flavor), but some people might pick up on it. I used it only because the store was out of the regular.

I use it all the time and can't tell a difference in taste from regular. But I only use it when I'm baking for family because I know some people are allergic to or don't like to eat artificial sweeteners.

I tried it .Came out great. I also substituted the water for sprite and the cake was super light and fluffy.

I NEVER use the sugar free pudding mixes, but it is mostly because I and my father are both allergic to aspartame (aka Nutra Sweet/Equal). If you are using it in a cake that you are selling, make sure your customer can have aspartame!
