I may need to make a gluten free cake sometime, my uncle has celiac disease and can't have any products made with gluten. They have a certain cake mix I can use. However, what can I use so the cake won't stick in the pan. I can't use flour and when I tried Pam only in an 11x15 I had trouble getting it out of the pan. I could probably put parchment paper on the bottom, but what about the sides of the pan?

Use plain shortening on the sides, and just run a knife or thin spatuala round the edge (after it comes out of the oven, but before it is completely cooled. With parchment on the bottom, the cake will come right out. It it lookis like is might cling to the bottom, I tap firmly on the top rim of the pan to bounce the layer loose.

I have two children with celiac's.

Can you get gluten free flour or alternatively use rice flour. (rice flour is just plain rice ground really fine like icing sugar)

My son just got diagnosed with lots of food allergies and cannot have wheat, corn, or soy... They sell gluten free flour mixes at Whole Foods store or large supermarkets. Rice flour would be your best bet for flouring the pan.
