A dampened sponge also works well, just dampen, squeeze out any excess water and gently pounce over any rough parts. You can use new makeup sponges or cleaning sponges.

I like the interfacing idea. Quick question, Whe I smooth cakes that have colored icing I always seem to get variations in color, how di I avoid this if using a sponge that would most likely have some moisture left in it?
