Fading Colors

Does anyone knows what to do when colors fade?
I place my cakes in the display freezer and a few days later the colors start to fade.
What can I do about it? I work with ice cream cakes.

Exposing certain colours to light will cause them to fade over time. Wilton's violet is notorious for this
