I purchased a large capacity poundcake pan that makes the larger size poundcakes. It appears to be an aluminum pan. I have made 10 poundcakes in this pan and they have all fell! I've used these recipes for years and they've never fallen in my bundt or regular size poundcake pans. The cakes always test done, and look done. But after I take them out of the pan, they fall and look like they are not done towards the bottom of the cake. I've tried moving the racks up and down and adjusting the temp. NOTHING seems to work!

HELP!!!!!!!!! Can someone please give me some advice!

That is a tough one. If you are using the same recipe in a larger pan, are you increasing the recipe? Not all recipes do well when doubled.

What is the capacity of the two size pans. that might help in answering the question.

Do you use a flower nail or heating core?

Thanks for trying to assist me. I did not double the recipe. I'd been baking the recipe in a 10 cup pan, but always had extra batter left over. So, I thought by purchasing the bigger 14 cup pan, I would be able to bake the entire recipe in one pan. Since my initial question, I have found out that this 14 cup pan is a heavy aluminum angel food cake pan. The website where I found the pan says that this pan holds more heat than the normal pouncake pan.
