Because, I just finished the last of 3 frosted, undecorated cakes.
I have been trying without success for the past 4 months to find a kitchen to work from so I can get licensed. No luck. So I sent a friendly email to one of the local bridal associations a couple weeks ago. I finally got to speak with her, told her my story, and that was all it took.
She refered me to a local caterer who doesn't have anybody to do his cakes besides the local grocery. He's got a great reputation, an office in a posh historical building that hosts many weddings and fancy affairs, and a renovated warehouse for his main kitchen!
I tried meeting with him last week, and things happened on his end. So I called this morning to reschedule, and his wife said to be there tomorrow at 3:30 with some cakes for his bi-monthly tastings for 4 brides to be! She said not to worry about the kids, bring them, hers will be there too (a bit unusual, but ok).
Now, we've never met, he's never even seen pictures of my work, nothing. Nor have I ever done a formal tasting. So I got right to work. I made 3 different flavors, 8" each with only a bottom border, basic buttercream. Got some nice clear containers from the grocery deli for sample to take with, printed out a small flyer with cake flavor options and prices. Printed little cards to display in front of each cake with that flavor, so they know what they're eating. Plenty of business cards, order forms, etc. Did I forget anything? I really want to impress not only the brides, but more important, the caterer.
Thanks to everyone on CC with all their tips, advice, stories both good and bad, and all the support out there for each other, I am totally confident and prepared for this.
