Why Is My Fondant Sticky?

I made fondant for my fondant/gumpaste class. I made it last night using Toba Garrett's recipe on this website. It was very sticky today when I went to use it. I had fondant all over my hands. I used almost the entire 2 pounds of sugar and followed the recipe exactly. What did I do wrong? Is it supposed to be sticky like that? I thought it was supposed to be more like clay. It was very soft. What did I do wrong? Please help me!! icon_cry.gif

i had the same problem with homemade fondant. at least, the regular stuff. the mmf turns out perfect, but my regular fondant is so sticky, its almost impossible to use. i've used all 2 lbs, and then some of the ps and i keep rubbing in crisco, and nothing works! i am going to try again, and i think i'll use less corn syrup, to see if that helps. but if someone knows what is causing that please tell us!

If it is very humid where you are, it will make a big difference in how much sugar you need. Are you sure you measured correctly, it shouldn't be that sticky. Sift more sugar onto the work surface, and then a bit over the fondant and knead it until it is not sticky.

Usually when fondant is sticky,you need to knead more shortening into it ( rub it on your hands & knead the fondant )...too much icing sugar will dry it out,making it crack.
