Okay, I am new here and loving this site! I started making cakes 5 years ago and am just getting more and more into it as I go. My first cake was hidious but I kept going and am starting to get much better. I have recently had one person ask me to make a pool table cake for them for next weekend, then someone else ask me to do their wedding cake in July, I am also doing a groomscake in July. Needless to say, being still new at cake making and decorating I have lots of questions because I want these cakes to be awesome.
1) My first question is about fondant. I made a cake using fondant last year, it was my first and only. I loved the effect of the fondant but the taste was less than desirable. My question is are you supposed to eat the fondant or remove it before serving? It was the store bought rolled fondant, maybe there are some homeade recipies that taste better or something else that gives the effect of fondant but tastes better?
2) My next question is about chocolate clay. I would like to expeirement with making chocolate roses or flowers but would like some directions on how to do this, any help of where I can find step by steps?
3) On freezing cakes. Should cakes be frozen with decorations or is that just a bad idea?
Sorry so long, I am just getting started and am going to use today to play around with some different things!

As far as the fondant goes, people can do whatever they want -- it can be peeled off or eaten. Most people seem to peel it off, but if you make Marshmallow fondant or get a good brand, like Satin Ice, then many will eat it. MMF tastes great, but is really sweet. Wilton packaged is the WORST!!!

Can't help you with the chocolate clay. Sorry.

Certain things you can freeze and others you shouldn't. I would ask as you go and get specific answers to specific cakes you're doing.

About fondant...Wilton fondant is notoriously bad tasting. You can try MMF (marshmallow fondant), the recipe is here on this site, it tastes much better, but still some people don't like it. Many people put a generous layer of buttercream under the fondant for those who choose to peel it off.
Sorry, I don't have any experience with chocolate clay.
You can freeze a decorated cake, just make sure it is wrapped VERY well.

If you want to get a better tasting fondant you can buy try Satin Ice. Much better tasting.

I use MMF, however my family still doesnt want it as the base icing....so i use MMF for accents and buttercream for base......quite frankly I think its a texture thing....you know having a chewy icing....I dont LOVE mmf but it certainly is 100 times better than the Wilton fondant, and cheap and easy to work with.

i absolutly love working with mmf...and it is so easy to make and use, and it is super yummy!!! make a half batch and try it...you'll love it!

Thank you everyone for your QUICK advise. WOW! It seems that everyone liks the MMF so I am going to try that today! I am so excited to try something new. Glad to know it is possible to get a better flavor with fondant. My daughters cake was beautiful but didn't taste that great. Now I know why, don't use Wilton's rolled fondant if you want to eat it. I am sure I will be back with more questions as I go! And I'll be sure and post a picture of my pool table when I get done with it.

Sumkat, Make sure you grease the bowls, spoons, and everything when you make your MMF. I didn't the first time and found it very difficult. After I used Crisco on everything, including my hands when I kneaded it, it turned out great!
