I am doing a last minute cake for a friend of mine. I'm planning a 2-layer 9" round white cake with raspberry filling, iced in buttercream with green vines and the raspberries on top, as seen in the Wilton book. I dont' know if I'll have time to shop all over town for fresh raspberries, so I was wondering if I coud thaw out frozen ones? If it'll look or taste bad, I don't want to do it. Any tips would be helpful!

Thanks in advance. icon_wink.gif

Unfortunately, they will be mushy when thawed.

Frozen get mushy and there is a ton of juice when they defrost. It will make the make soggy too.
