Gooey Cake Top?

For some reason whenever I make cakes the top is always still "wet" even though the cake is done so when I turn the cake out it sticks to the board. What am I doing wrong? Any suggestions would be GREATLY appreciated!!

When I make a all white cake I don't like the brownish top on it, so I just use a piece of wax paper lay it on, and press it down on the top of the cake as soon as I take it out of the oven, wait for it to cool then peel the paper off. The top layer sticks to the paper and pulls off. This way I get a all white cake and when i flip it out it doesn't stick. HTH

Mine for some reason are always sticky. Am I not letting it cool long enough? It seems like even when I tried to let it completely cool in the pan the top was still sticky and when I flipped it out it stuck to the board. icon_sad.gif
