As I have mentioned before, I have 2 sons under the age of 4 and a husband who works LONG hours as a store manager for Lowes....so I don't always have the opportunity to make a cake or pipe royal icing flowers all at once...I find myself doing things in "baby steps" (except for those blissful hours between 9:30pm and 1:00am when everyone is asleep!)
Anyway - I wanted to try to start with gum paste and fondant. I know that they dry out pretty quickly, especially gum paste. But I was wondering if I made a batch, colored it and separated it and vacuum-packed it in a bag with my foodsaver if it would still stay fresh? I am assuming that the fondant would, or else they wouldn't be able to sell pre-made fondant....but what about gum paste?

Put it in the frig after you seal it and you should be fine for about 6 weeks...
I have not tried gumpaste as of yet(but really want to), but I always foodsaver my left over fondant. The longest I have ever kept it was two weeks, so I am not sure how long it will last in the food saver bags.
I am not sure about homemade fondant, but most fonant can be kept for up to a year as long as it is stored properly and kept at room temperarture. I am sure you can foodsaver gumpaste. I dont see why there would be a problem.

I have Wilton fondant in ziploc bags in the freezer. All you need to do is put them in the frig the night before you use it to let it thaw out. When you go to use it just roll it & kneed it & you can go from there!

I wrap mine in plastic wrap and put in a foodsaver container and suck out the air and store in fridge It does last longer than putting my wrapped gumpaste in a ziplock
WHAT DOES GUM PASTE TASTE LIKE??
well it is edible but since you usually make the flowers on wires most do not eat it...taste ? Kinda like sugar not bad not fantastic you can save the finished flowers for years but they will get that stale taste and smell after 6 months to a year.
If I was making the cake say for children who will eat the flowers I would choose, royal icing, candy clay,butter cream or even fondant mixed 1/2 and 1/2 with candy clay
